Eight hundred years, one valley.

Uji, just south of Kyoto, is the valley that defined the Japanese tea ceremony, and farmers have grown shade-covered tencha on these terraced fields since the 13th century. Everything in your pouch comes from one estate, one harvest window and one stone mill, so you know exactly where your matcha was grown.

What makes it premium.

The shade period

The plants spend more than 30 days under cover before harvest, and that is where the deep umami and natural sweetness come from.

The stone mill

It is ground slowly and kept cool on the stone mill, so the colour stays vivid jade and the aroma stays fresh and grassy.

One valley

Everything comes from one estate in Uji that you can trace, and nothing is blended in.

The ritual

How to whisk

Sift 2g (one bamboo scoop) into a warm bowl. Add 75ml water at 80°C, not boiling. Whisk briskly in a W-motion for 20 to 30 seconds until a fine jade foam forms, then drink straight away.

For a latte

Whisk 2g with a splash of hot water into a smooth concentrate first, then add 150ml warm milk, oat or whole. Making the paste first keeps it from clumping, so you will not need a blender.

Storage & freshness

Reseal the pouch, keep it cool and out of sunlight. At its best within eight weeks of opening. One 30g pouch is about fifteen bowls.

Returns

Haven't opened it? Send it back within 14 days for a refund. Once the seal is broken we can't take it back, since it's food and that's the rule (art. 6:230p BW). If anything turns up wrong or damaged, that's on us and we'll sort it.

How to prepare

Two grams in a bowl, 75ml of water at 80°C (not boiling, that's the one that trips people up), then whisk hard in a W shape for 20 to 30 seconds until it foams. That's about fifteen bowls a pouch. There's a fuller walk-through up in The ritual.

Origin & grade

It all comes from Uji in Kyoto, the valley where Japanese matcha basically began. First harvest, ceremonial grade, stone-ground. Nothing is blended in, and every batch can be traced back to the estate.

Storage & freshness

Reseal the pouch and keep it somewhere cool and dark. It's at its best within about eight weeks of opening. Still sealed? Just go by the date on the pouch.
